Ingredients:
Alfredo Sauce:
1 cup macadamia nuts, raw
1 cup cashews, raw
1/2 cup lime juice + 1/4 cup of water
1 tsp. Celtic salt
1 tbs. garlic
1 tsp. pepper corn
Fettuccine:
3 zucchinis
Garnish:
8 small basil leaves
Equipment:
High-speed blender
Spiral Vegetable Slicer
Directions:
Alfredo Sauce: Blend all of the other ingredients in the high-speed blender until creamy.
Fettuccine: Peel the zucchinis and then run them through the spiral vegetable slicer. Choose the larger-flat open blade.
Basil leaves: slice them thinly chiffonade style
Place the spiraled zucchini in a bowl and pour the sauce over it. Using two large spoons, mix the sauce and the zucchini until it looks like fettuccine Alfredo.
Serve it on a deep plate and garnish with chiffonade basil leaves. It tastes like heaven!
